Chipotle Mashed Potatoes

Procedure
  • 1 Cover the potatoes with cold water, add salt, bring to a boil, and simmer until tender, approximately 25 minutes.
  • 2 Drain the potatoes and return to the pot. Cook over low heat for approximately 3 minutes to allow them to dry.
  • 3 Mash, grind, or rice the potatoes.
  • 4 Blend in the butter and cream (adjust the consistency as desired with warm cream or milk).
  • 5 Season to taste with salt.
  • NOTE - For chipotle flavor, mince one chipotle and add to mashed potatoes
